banana bread fresh out the oven

Banana Bread

You forgot about your Bananas in the shelf again and now they’re all brown and look not so yummy anymore? No Problem! Now they’re perfect for some nice Banana Bread! Have yourself a nice treat for breakfast or a snack in your breaks during the day.

What you need:

❧ 250g of flour
❧ 1 tsp of baking soda
❧ a good pinch of salt
❧ 100g softened butter
❧ 150g brown sugar
❧ 2 eggs
❧ 4-5 overripe bananas

What to do:

Preheat your oven to 180°C

Combine in one bowl the flour, baking soda and salt and whisk it all together.

Take a separate bowl and mix the softened butter with the brown sugar. Leave a small piece to oil your loaf pan.

Add your two eggs and mix them well into the butter.

Take another bowl to mash your bananas until you have a nice mushy slime.

Add your bananas to your mixture as well.

Now pour this mixture into your first bowl with the flour.

Mix everything together. Don’t work to hard on the dough, just mix it until its fairly combined, that’s enough.

Now Oil your loaf pan with that leftover piece of butter. Pour the whole mixture in your form and pop it in the oven!

Let it bake for around 45 mins.

But I suggest that you check on your dough after the first 30 mins to make sure it wont burn, every oven works somewhat different. To make sure it also won’t under cook use the reliable wooden stick method. Take a thin wooden stick or skewer and stick it in the middle of your dough. If it comes out clean your banana bread is done.
